GINGER PINEAPPLE ICE CREAM
Ingredients
  • Two 10-oz containers of frozen pineapple juice
  • 2 quarts fat free half-and-half
  • 1/2 cup vanilla dairy creamer
  • 1/4 to 1/2 cup grated ginger
  • 1/2 cup sugar
  • 1 teaspoon of cinnamon can be added

To facilitate the grating of the ginger, peel it and freeze it. This must be done ahead of time.

Combine the ingredients. I like to put some of the liquid into a blender along with the ginger. Blend this at the highest speed. This chops up the ginger.

Follow the instructions of your ice-cream maker.
